  • 1 x 2-3# lobster, (poached in court bouillon)
  • 3 slices pickled red onion (see recipe)
  • 5 slices hearts of palm (blanched, fresh)
  • 3 x ¼ inch diced pineapple
  • .5 oz. pea puree (see recipe)
  • 1 Tbsp. pineapple vanilla dressing (see recipe)

Pineapple Vanilla Dressing Batch Recipe
Yield ½ cup

Yield 1 pint

  • 8 oz. lemon juice
  • 4 oz. pineapple juice
  • 2 ea. vanilla pod, scraped (insides)
  • 2 tsp. Dijon mustard
  • 2 oz. toasted sesame oil
  • 2 oz. olive oil

1. Puree all ingredients until smooth

Pea Puree Batch Recipe
Yield 1 cup portion


  • 2/3 cup English peas, fresh
  • 1/3 sour cream
  • 1 tsp. salt
  • 2 oz lobster stock


1. Blanch and shock peas. Drain and allow to dry off.
2. In a vita mix blend all ingredients until smooth.
