Delight in a multicultural dish featuring Ethiopian chicken stew and homemade pasta

Celebrity Cruises has partnered with Fine Cooking magazine and their Emmy Award-nominated PBS series Moveable Feast with Fine Cooking to showcase the culinary talent of world-acclaimed chefs on a luxury Moveable Feast cruise.

Foodies will be able to sail to the Western Caribbean aboard our newest ship, Celebrity Edge, for an unforgettable culinary journey with renowned chef and restaurant owner Marcus Samuelsson and cookbook author and TV personality Gail Simmons.

Chef Marcus Samuelsson is the culinary genius behind distinguished international restaurants including Red Rooster in Harlem, New York; Rooster Shoreditch in East London, England; and Marcus B&P in Newark, New Jersey. He’s the author of several books and cookbooks, including the New York Times bestseller, The Red Rooster Cookbook.

Culinary expert, food writer, and television personality Gail Simmons is a Canada native and currently hosts Iron Chef Canada. She is an Entrepreneur in Residence at Babson College and was named the #1 Reality Show Judge in America by the New York Post.

Get a taste of Chef Samuelsson’s multicultural approach to food before your culinary cruise by creating his doro wat pasta dish at home. Doro wat is one of the most popular African stews on the planet, and given Chef’s Ethiopian and Swedish heritage, this recipe is his natural culinary riff on a classic comfort food.

Doro wat pasta uses classic handmade, hand-cranked egg pasta (your choice of shape) as a base for a flavor-suffused chicken stew. Red onions, garlic, fresh ginger, and berbere (an Ethiopian spice blend) are cooked down to a concentrated blend and added to lightly crushed San Marzano tomatoes and chicken stock, along with berbere-coated bone-in chicken thighs; then all is simmered until the chicken is falling-of-the-bone tender.

Just before serving, the deboned chicken and sauce are gently heated along with the freshly cooked pasta. The final addition of grated Parmesan cheese, fresh basil, and arugula, along with a few drops of freshly squeezed lemon juice, place the finishing touches on this mouthwatering meal.
