Chef Bernstein’s recipe is her take on a classic white gazpacho. This blended cold soup is a staple in the Andalusia region of Spain where tender, sweet Marcona almonds are plentiful. The recipe incorporates salted Marcona almonds along with sweet green grapes and fragrant dill.
Rich extra virgin olive oil gives this cool, refreshing soup a creamy consistency, and the vegetable broth, garlic, and shallots kick up the vegetable quotient just the right amount.
