Lamb, chicken, or goat is marinated with herbs and spices, then stacked on a vertical, rotating spit and slowly roasted to produce tender meat with complex flavors. Shawarma is thinly sliced from the spit, piled onto pita, and topped with tahini, tabbouleh, or hummus, but never tzatziki.
