Polish Jews brought “beigels” to New York when they immigrated. Boiled then baked, the round bread with the chewy texture and hole in the middle caught on first in New York as Jewish delis served them cut and slathered with cream cheese and topped with cured salmon (lox). Today, bagels are an all-American favorite.
