soba
Soba are Japanese buckwheat noodles and also the name of the dish named for the noodle. Soba noodles have a slightly nutty flavor and are smaller and thinner than noodles made from other kinds of flour. Soba is either served cold with a smooth sesame sauce or hot in broth.
