Caribbean Lobster Salad
INGREDIENTS: Yield 1 portion
1 x 2-3# lobster, (poached in court bouillon)
3 slices pickled red onion (see recipe)
5 slices hearts of palm (blanched, fresh)
3 x ¼ inch diced pineapple
.5 oz. pea puree (see recipe)
1 Tbsp. pineapple vanilla dressing (see recipe)
Pineapple Vanilla Dressing Batch Recipe
Yield ½ cup
INGREDIENTS:
Yield 1 pint
8 oz. lemon juice
4 oz. pineapple juice
2 ea. vanilla pod, scraped (insides)
2 tsp. Dijon mustard
2 oz. toasted sesame oil
2 oz. olive oil
METHOD:
1. Puree all ingredients until smooth
Pea Puree Batch Recipe
Yield 1 cup portion
INGREDIENTS
2/3 cup English peas, fresh
1/3 sour cream
1 tsp. salt
2 oz lobster stock
METHOD:
1. Blanch and shock peas. Drain and allow to dry off.
2. In a vita mix blend all ingredients until smooth.
