Poi is a staple food in Hawaiian cuisine, made from fermented taro root and pounded into a paste. It has a vibrant to muddy purple color, vaguely sweet flavor, and often accompanies fresh fish or pork lau lau. It is still traditional and acceptable to eat poi with one’s fingers.
