First served to farmers by a Hawaiian businessman in 1955, huli huli chicken is now an island specialty often sold at fundraisers. Chicken pieces are marinated in a pineapple teriyaki-style sauce, then placed between two grill grates over an open fire and turned halfway through cooking. The word “huli” is Hawaiian for “turn.”
