Borscht, a ruby-red, sour-sweet soup of earthy ingredients like beets, cabbage, carrots, tomatoes, broth, dill, and other herbs and spices, has a long history in Eastern European countries, especially Ukraine. Borscht is served hot or cold, usually with a side of boiled potato and sour cream.
