alcapurrias
The alca, also known as an alcapurria, is a fritter popular in Puerto Rico made with green banana, meat, achiote, and yautia. Veggies are mashed into a paste, formed into a shape, then carefully stuffed with meat and deep-fried to a golden brown. Served hot or cold, alcas are a type of mofongo, any dish whose main ingredient is mashed plantains.
