Inspiration
The Compagnie Générale Transatlantique's SS Normandie entered service in 1935 as the first French entry in the era of huge transatlantic ocean liners. The largest and fastest ship in the world at that time, she won several Blue Ribands during her illustrious career. Also known as one of the most elegant ships, the SS Normandie is now acknowledged as an Art Deco masterpiece.

Cuisine
The goal is the perfect marriage of flavors, artfully presented. We always seek out the highest quality ingredients, such as sourcing domestic, diver-caught scallops. We especially love to prepare some of the dishes tableside for you, as you watch. The quality of the ingredients and the presentation is key. Dishes are created in the classical realm, but we really work with how the dishes and their accompaniments are presented. A cognac-flambéed lobster tail with fresh basil, applewood smoked bacon and Dijon cream, is finished right in front of you at your table.
