Built by the Compagnie Générale Transatlantique eight years before SS Normandie, the SS Ile de France was one of the first Art Deco grande dames. She was also one of the first ocean liners to boast more beds than bunks, and passengers marveled at her soaring three-story-high dining room. The goal is the perfect marriage of flavors, artfully presented. We always seek out the highest quality ingredients, such as sourcing domestic, diver-caught scallops. We especially love to prepare some of the dishes tableside for you, as you watch. The quality of the ingredients and the presentation is key. Dishes are created in the classical realm, but we really work with how the dishes and their accompaniments are presented. A cognac-flambéed lobster tail with fresh basil, applewood smoked bacon and Dijon cream, is finished right in front of you at your table.
